We are Kim and Theo Hanson. (With our first grandchild Palmer!!) We have learned the hard way that what we eat matters. Life is to short to eat crappy food (or for that fact, food that tastes crappy!) We are excited to share our story and experience with Juicing, eating Raw, defeating Cancer and losing a ton of weight! This site is an extension of our kitchen and of our lives. We are glad you are here! Our circle of family and friends grows every week. And more and more people are becoming aware that our food systems are hijacked and that our medical approaches to serious illness are losing ground. There is so much potential in eating well. Avocado Lime ‘Soup’

Blend these: 2 avocados, 1/2 a cucumber, stalk celery, 1/2 tsp Himalayan or Celtic Salt, 1tsp Tamari, 1 tsp chili powder or cumin, (optional) 1 tsp coriander, juice from 1 lime, 1 cup water (hot water makes warm soup). Garnish with a dollop of cashew based ‘sour cream’, a sprig of cilantro, crushed pepper, dried goji berry and sliced chive on it.

Chocolate Cheesecake

This ‘dessert’ is so good and good for you, that it is hard to know where to file it. It is healthy and life is to short to not live every minute in delight. So, I say it should be a treat before an entree. There are several great ways to make this. Scroll down to desserts to get the detailed recipe as Kim makes it. Crust is pecans, dates, cacao, salt, vanilla and coconut oil. The filling is cashews, coconut oil, honey, water, vanilla and of course, more cacao.

kale meets figs

Kale is King. This salad tastes heavenly. Dino/lacinato or curly kale, chopped or sliced. Squeeze some lemon, small amount of oil of your choice, and a pinch of salt. Put all this in a bowl and mix together. Don’t be afraid to crush the kale slightly. Let that sit 20 mins if you can! Use your favorite dressing. Top with figs quartered, add some seeds, a chopped nut of your choice, salt and pepper.

Taco TuesdayVegan/Raw

These are incredible. We amaze our friends with an all Vegan all Raw option. These are like candy they are so good!!

Raw RellenoVegan/Raw

We are from San Diego. So we have some AMAZING Mexican food. You can heat the chile in a pan just a little or dehydrate them. Either way, delicious and fun!

Chia and MilkVegan/Raw

Soak Chia Seeds in Almond Milk for an hour or overnight. Slam in some blackberries, drizzle some honey over it and sprinkle with some nuts. Go nuts!

Awful Falafel?Vegan/Raw

I know. Cheezy. Ridiculously good, especially cold. Grape tomatoes, cucumber, coriander, chickpeas, mint, salt and lemon.

California RollsVegan/Raw

What? I know!! They are better called Rawlls. Grind some almonds for the ‘rice’, avocado, carrot, green onion, sunflower seeds, cucumber, plum paste, sauerkraut.

PB Choco puddingRaw/Vegan

I am pretty sure this is illegal in 30 states or more. It is Avocado, banana, cacao, dates, almond milk blended up. Top with some Peanut Butter…..

Famous RebootJuice

World famous. Use a juicer. 1 lemon, apple, 4 celery stalks, 2 carrots, parsley, clove garlic, and a some mint.

Pineapple ExpressJuice

This one is on like donkey kong. 1/4th Pineapple, 1 cucumber, 5-6 leaves lacinato kale, and a granny smith apple.It is a sweet treat countered by the green.

Kim Killed CancerJuice

The juice that started it all. A huge thanks to James Franklin for the introduction. It is amazing what this did. This is the cornerstone of our health and vitality. We are humbled and happy to share it!!

Famous Chocolate ‘Cheesecake’ Dessert

Sooooooo… we were trying to take some photos of the juices, food and dessert. Hah! This one didn’t last. That is because it is ridiculously good. This is not a low calorie option. And by itself it is NOT a good idea to build a diet based on sweet stuff, even if it is Raw!! But in a balanced diet this is a nice treat with lots of good for “you-ness”! This is a pretty incredible dessert and very versatile. It is Raw, Vegan, Gluten-Free, Dairy-Free, and is Paleo-Friendly. This might be the holy grail of cross diet discipline co-existence!! Easy to do crust and the filling is easier. Click on the image and get the ingredients and instructions on the recipes page! Use this to impress all the naysayers who like to tell you that eating right means giving food pleasures up!!

This is literally so good that it deserves it’s own web page. It is that good. This is a Raw, Vegan, Gluten-Free, Dairy Free, Paleo-Friendly, No Refined Sugar Recipe. If we had known how delicious eating Raw could be, we would have made the jump just for the flavor and textures!! It is easy to make and will blow your ‘not-raw’ friends away!
